Instructions
Boil the eggs for 8–9 minutes until hard, peel them, and cut them in half.
Combine the greens, carrot, tomato, and olives in a bowl.
Whisk together a dressing using olive oil, mustard, lemon juice, pepper, and salt.
Place the eggs on top and drizzle the dressing over the salad.

A light, summery salad with a kick from the mustard-lemon dressing.
