Niçoise Salad with Egg

Ingredients

  • – 2 eggs (hard-boiled)
  • – 100 g carrot (grated)
  • – 1 handful of spinach or mixed greens
  • – 1 tomato, cut into wedges
  • – 6 green olives
  • – 1 tbsp olive oil
  • – 1 tsp mustard
  • – 1 tsp lemon juice
  • – Pepper, salt

Instructions

Boil the eggs for 8–9 minutes until hard, peel them, and cut them in half. Combine the greens, carrot, tomato, and olives in a bowl. Whisk together a dressing using olive oil, mustard, lemon juice, pepper, and salt. Place the eggs on top and drizzle the dressing over the salad.

Serving Tip

A light, summery salad with a kick from the mustard-lemon dressing.
