Mint-Spinach Dip with Yogurt

Ingredients
- —60 g fresh spinach
- —100 g yogurt (full-fat, goat, sheep, or soy yogurt)
- —1 small clove garlic, finely chopped
- —1 handful fresh mint, finely chopped
- —1 handful parsley, finely chopped
- —1 teaspoon lemon zest
- —1 teaspoon lemon juice
- —Pepper and sea salt to taste
Instructions
- Blanch the spinach for 30 seconds and rinse with cold water.
- Squeeze out as much moisture as possible and chop finely.
- Mix the yogurt with garlic, mint, parsley, lemon zest, and lemon juice.
- Stir in the spinach.
- Season with pepper and sea salt.
- Serve chilled.
