Mint-Spinach Dip with Yogurt

Ingredients

  • 60 g fresh spinach
  • 100 g yogurt (full-fat, goat, sheep, or soy yogurt)
  • 1 small clove garlic, finely chopped
  • 1 handful fresh mint, finely chopped
  • 1 handful parsley, finely chopped
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • Pepper and sea salt to taste

Instructions

- Blanch the spinach for 30 seconds and rinse with cold water.

- Squeeze out as much moisture as possible and chop finely.

- Mix the yogurt with garlic, mint, parsley, lemon zest, and lemon juice.

- Stir in the spinach.

- Season with pepper and sea salt.

- Serve chilled.

Serve the dip in a small bowl topped with lemon zest and mint. Fresh, smooth, and creamy — a green dip with pure flavors and a light Mediterranean touch.
