
Lemon-Vanilla Skyr with Warm Blueberries & Pistachio Crumble

- —400 g plain skyr
- —150 g blueberries
- —1 tsp vanilla extract
- —1 organic lemon
- —30 g unsalted pistachios
- —1 tbsp pumpkin seeds
- —1 tsp chia seeds
- —½ tsp cinnamon
- —1 tsp honey (optional)
Instructions

Heat the blueberries with the cinnamon for 2 to 3 minutes in a small pan until they soften and some of the juice is released.
Mix the skyr with the vanilla extract and finely grated lemon zest.
Divide the skyr between two bowls.
Spoon the warm blueberries partially over the skyr to create a nice color contrast.
Garnish with coarsely chopped pistachios, pumpkin seeds, chia seeds, and optionally a small drizzle of honey.

Also delicious with raspberries or blackberries when they are in season.
