Leksands Knäcke with Warm Spinach-Yogurt Spread

Ingredients

  • 1 Leksands Knäcke Original
  • 120g spinach, roughly chopped
  • 70g yogurt (full-fat, goat or sheep yogurt)
  • 1 small shallot, finely chopped
  • 1 teaspoon lemon zest
  • Salt and pepper to taste
  • Splash of water for cooking

Instructions

  • Heat a pan over medium heat with a small splash of water.

  • Add the shallot and cook for 1–2 minutes until softened.

  • Add the spinach and stir until fully wilted.

  • Remove from heat and mix the warm spinach with the yogurt.

  • Season with lemon zest, salt, and pepper.

  • Spoon the warm spinach-yogurt spread on top of the Leksands Knäcke.

  • Serve immediately or let cool for a tupperware-to-go option.

Serving Tip

Extra delicious with an extra pinch of lemon zest on top.

Storage Tip

Let cool completely before placing the crispbread in a container to maintain its crunch.
