A hearty, flavorful soup with tender leek, mild garlic, and creamy feta. Comfort food with a kick — simple to make yet rich in taste. Here's how to make it: Heat the ghee in a pan and gently soften the leek. Add the stock and let it simmer gently for ten minutes. Next, add the garlic and most of the feta. Briefly blend the soup until smooth — it can still have some texture. Season with lemon, pepper, and salt. Ladle into bowls and finish with a bit of extra feta and freshly ground pepper.
