Japanese Shiitake Stir-Fry

Ingredients

  • 200g shiitake mushrooms, quartered
  • 1 small leek, sliced into thick rings
  • 1 clove of garlic, finely chopped
  • 1 small piece of ginger (1 cm), grated
  • 1 teaspoon lemon zest
  • Salt and pepper to taste
  • 2–3 tablespoons water for cooking

Instructions

  • Heat the pan until it's nice and hot.

  • Add the shiitake mushrooms and cook them until they soften and develop a slight sheen.

  • Mix in the garlic and ginger once the shiitake are warm.

  • Add the thick leek rings and let everything gently cook together.

  • Season with lemon zest, pepper, and a pinch of salt.

  • Serve warm when the vegetables are tender and fragrant.

Serving Tip

Serve in a dark bowl and arrange the shiitake and leek in separate sections for an authentic street food vibe.
