
Ingredients
- —1 tablespoon olive oil
- —1 small onion or piece of leek, finely chopped
- —1 clove garlic, finely chopped
- —1 can white beans (400 g), rinsed and drained
- —150 g diced tomatoes (unsweetened)
- —1 teaspoon tomato paste
- —1 teaspoon Italian herbs
- —Pinch of chili flakes
- —1 handful fresh spinach
- —Salt and pepper to taste
- —Optional: 1 tablespoon balsamic vinegar or a splash of vegetable broth
Instructions
Heat the olive oil in a frying pan and sauté the onion and garlic for 2 minutes.
Add the tomato paste and cook for 1 minute.
Stir in the diced tomatoes, beans, herbs, and chili flakes.
Let it simmer gently for 15–20 minutes until the sauce thickens.
Stir in the spinach until wilted and season with salt, pepper, and optionally balsamic vinegar.
