Italian Baked Beans

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion or piece of leek, finely chopped
  • 1 clove garlic, finely chopped
  • 1 can white beans (400 g), rinsed and drained
  • 150 g diced tomatoes (unsweetened)
  • 1 teaspoon tomato paste
  • 1 teaspoon Italian herbs
  • Pinch of chili flakes
  • 1 handful fresh spinach
  • Salt and pepper to taste
  • Optional: 1 tablespoon balsamic vinegar or a splash of vegetable broth

Instructions

  • Heat the olive oil in a frying pan and sauté the onion and garlic for 2 minutes.

  • Add the tomato paste and cook for 1 minute.

  • Stir in the diced tomatoes, beans, herbs, and chili flakes.

  • Let it simmer gently for 15–20 minutes until the sauce thickens.

  • Stir in the spinach until wilted and season with salt, pepper, and optionally balsamic vinegar.

Serving Tip

Warm, flavorful tomato sauce with creamy white beans — simple, nourishing, and authentically Italian. Perfect as a light dinner or lunch with a slice of rye bread. Serve in a deep bowl with a drizzle of olive oil and fresh basil or parsley. Delicious with a slice of rye bread.
