High-Protein Spinach Lasagna

Ingredients
- —500 g fresh spinach
- —300 g cottage cheese (high protein content)
- —2 eggs
- —6–8 cherry tomatoes, halved
- —Fresh basil
- —Pepper, salt, nutmeg
Instructions
Preheat the oven to 180 °C.
Briefly heat the spinach in a dry pan until wilted. Drain well and press out any excess moisture.
Whisk the eggs with cottage cheese, pepper, salt, and nutmeg.
Mix in the spinach and pour the mixture into a small baking dish.
Arrange the cherry tomatoes on top and bake for 30 minutes until golden and firm.
Garnish with fresh basil.
Serving Tip
Soft, creamy lasagna without cheese — light, protein-rich, and also perfect as a warm lunch. Serve directly from the baking dish or on a plate with fresh basil leaves and a drizzle of olive oil for shine.
Storage Tip
Store covered in the refrigerator for up to 2 days. Reheat in the oven at 160 °C for 5 minutes or in the air fryer for 2 minutes.
