High-Protein Spinach Lasagna

Ingredients

  • —500 g fresh spinach
  • —300 g cottage cheese (high protein content)
  • —2 eggs
  • —6–8 cherry tomatoes, halved
  • —Fresh basil
  • —Pepper, salt, nutmeg

Instructions

  • Preheat the oven to 180 °C.

  • Briefly heat the spinach in a dry pan until wilted. Drain well and press out any excess moisture.

  • Whisk the eggs with cottage cheese, pepper, salt, and nutmeg.

  • Mix in the spinach and pour the mixture into a small baking dish.

  • Arrange the cherry tomatoes on top and bake for 30 minutes until golden and firm.

  • Garnish with fresh basil.

Serving Tip

Soft, creamy lasagna without cheese — light, protein-rich, and also perfect as a warm lunch. Serve directly from the baking dish or on a plate with fresh basil leaves and a drizzle of olive oil for shine.

Storage Tip

Store covered in the refrigerator for up to 2 days. Reheat in the oven at 160 °C for 5 minutes or in the air fryer for 2 minutes.
