Preparation
Whisk the egg yolk, mustard, and lemon juice thoroughly in a bowl.
Slowly — drop by drop — add the oil while continuing to whisk.
Once the mixture thickens, whisk for an additional 30 seconds to achieve a creamy texture.
Season with salt.
Store in a sealed jar in the refrigerator for up to 3 days.
Serving Tip
For a lighter version, you can add 1 tbsp of yogurt. Perfect with grilled vegetables, potatoes, fish, or as a base for dressings.
