
Ingredients
- —120 g haddock fillet
- —130 g mixed vegetables (e.g., carrot, leek, or spinach)
- —1 tsp olive oil or ghee
- —1 tsp lemon juice
- —Pepper, salt, dill or thyme
Instructions
Pat the fish dry and season with pepper and salt.
Heat the olive oil in a frying pan.
Cook the haddock on one side for 3 minutes, carefully flip and cook for another 2 minutes.
Remove the fish from the pan and keep warm.
Add the vegetables to the same pan and sauté for 4–6 minutes until tender-crisp.
Drizzle everything with lemon juice and serve together.
Serving Tip
Place the haddock on top of the vegetables for an elegant presentation. Garnish with a sprig of dill or parsley and a slice of lemon.
Storage Tip
Store in the refrigerator for up to 1 day. Reheat gently in the pan with the lid on.
