Ingredients

  • 500 g green asparagus
  • 2 tbsp olive oil
  • 40 g breadcrumbs
  • 30 g mixed nuts, coarsely chopped
  • 1 clove garlic
  • 1 tbsp fresh parsley

Instructions

  • Preheat the grill pan or oven

  • If necessary, trim the woody ends off the asparagus

  • Toss the asparagus with olive oil, pepper, and salt

  • Heat a pan with a little olive oil

  • Toast the breadcrumbs until golden and crispy

  • Add the nuts and herbs, and cook briefly

  • Season the topping with pepper and salt

  • Arrange the asparagus on a serving platter

  • Spoon the crunchy topping generously over the asparagus

  • Serve immediately
