Green Wraps with Mustard Chicken and Spinach

Ingredients
- —300 g chicken breast
- —1 tsp coarse mustard
- —1 tsp lemon juice
- —60 g fresh spinach
- —6 large romaine lettuce leaves
- —pinch of salt
- —pinch of pepper
Instructions
Preheat the oven to 200°C. Mix the coarse mustard with lemon juice, salt, and pepper, and rub this mixture onto the chicken breast.
Place the chicken on a baking sheet lined with parchment paper and bake for about 15 to 18 minutes until cooked through and juicy.
Let the chicken rest briefly, then slice into thin strips.
Lay the romaine lettuce leaves on a board, spread the fresh spinach over them, and place the warm chicken strips on top.
Carefully roll up the leaves into wraps and serve immediately.
