Green Avocado Gazpacho

Ingredients
- β1 ripe avocado
- βΒ½ cucumber
- β1 spring onion
- βΒΌβΒ½ green chili (to taste)
- β10 g fresh basil
- β10 g fresh mint
- β1 clove of garlic
- βJuice of 1 lime
- β50 ml olive oil (high quality, mild flavor)
- β2 tbsp ginger syrup (or 1 tsp grated fresh ginger for a sugar-free option)
- β200 ml cold water (adjust for desired thickness)
- βSalt and pepper to taste
Instructions
Cut the avocado, cucumber, and spring onion into large chunks.
Place all ingredients into a blender or tall container.
Blend until smooth and creamy. Add more water if you prefer a lighter consistency.
Taste and adjust seasoning with salt, pepper, and additional lime juice if needed.
Refrigerate for 30 minutes to chill thoroughly.
Serving Tip
A silky, refreshing soup with herbal notes of mint, basil, and lime β light yet rich in flavor. Serve well-chilled in a glass or small bowl. Garnish with a drizzle of olive oil, finely chopped mint, or a slice of lime. For extra color: top with small cubes of avocado or cucumber.
Storage Tip
Covered in the refrigerator, it will keep for up to 24 hours. Stir or briefly blend again before serving.
