Green Avocado Gazpacho

Ingredients

  • β€”1 ripe avocado
  • β€”Β½ cucumber
  • β€”1 spring onion
  • —¼–½ green chili (to taste)
  • β€”10 g fresh basil
  • β€”10 g fresh mint
  • β€”1 clove of garlic
  • β€”Juice of 1 lime
  • β€”50 ml olive oil (high quality, mild flavor)
  • β€”2 tbsp ginger syrup (or 1 tsp grated fresh ginger for a sugar-free option)
  • β€”200 ml cold water (adjust for desired thickness)
  • β€”Salt and pepper to taste

Instructions

  • Cut the avocado, cucumber, and spring onion into large chunks.

  • Place all ingredients into a blender or tall container.

  • Blend until smooth and creamy. Add more water if you prefer a lighter consistency.

  • Taste and adjust seasoning with salt, pepper, and additional lime juice if needed.

  • Refrigerate for 30 minutes to chill thoroughly.

Serving Tip

A silky, refreshing soup with herbal notes of mint, basil, and lime β€” light yet rich in flavor. Serve well-chilled in a glass or small bowl. Garnish with a drizzle of olive oil, finely chopped mint, or a slice of lime. For extra color: top with small cubes of avocado or cucumber.

Storage Tip

Covered in the refrigerator, it will keep for up to 24 hours. Stir or briefly blend again before serving.
