Creamy Spinach with Ricotta and Lemon

Ingredients

  • 200 g fresh spinach
  • 100 g ricotta
  • 50 ml milk
  • 50 g onion
  • 1 clove garlic
  • 0.5 lemon (zest and juice)
  • pinch of nutmeg
  • pinch of salt
  • pinch of black pepper

Instructions

A creamy and smooth dish where spinach and ricotta come together, brightened with lemon and a hint of nutmeg.

  • Chop the onion and finely chop the garlic

  • Heat a pan and gently sauté the onion until translucent

  • Add the garlic and cook briefly

  • Add the spinach in batches and let it wilt

  • Stir in the ricotta and milk until creamy

  • Add lemon zest and a bit of lemon juice

  • Season with salt, pepper, and a pinch of nutmeg

  • Let it gently warm through until everything is well combined

Serve this dish warm as a soft and creamy side with a fresh citrus note.
