Gravad Lax (Scandinavian Style with Mustard-Dill Sauce)

Ingredients
- —160 g fresh salmon fillet, skinless
- —1 tablespoon fresh dill, finely chopped
- —1 teaspoon lemon zest
- —1 teaspoon lemon juice
- —1/2 teaspoon coarse sea salt
- —1/2 teaspoon black pepper
- —1/4 teaspoon cayenne pepper
- —For the sauce:
- —1 tablespoon mustard
- —1 teaspoon yogurt
- —1 teaspoon lemon juice
- —1 teaspoon dill, finely chopped
- —A small splash of apple cider vinegar
- —1 teaspoon honey
- —Salt and pepper
Instructions
- Pat the salmon dry.
- Mix dill, lemon zest, lemon juice, sea salt, black pepper, and cayenne.
- Rub the salmon all over with the mixture and wrap tightly.
- Let it rest in the fridge for 8–12 hours.
- Prepare a light mustard-dill sauce using mustard, yogurt, lemon juice, dill, honey, apple cider vinegar, salt, and pepper.
- Slice the salmon thinly and serve with the sauce.
