Gravad Lax (Scandinavian Style with Mustard-Dill Sauce)

Ingredients

  • 160 g fresh salmon fillet, skinless
  • 1 tablespoon fresh dill, finely chopped
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • 1/2 teaspoon coarse sea salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • For the sauce:
  • 1 tablespoon mustard
  • 1 teaspoon yogurt
  • 1 teaspoon lemon juice
  • 1 teaspoon dill, finely chopped
  • A small splash of apple cider vinegar
  • 1 teaspoon honey
  • Salt and pepper

Instructions

- Pat the salmon dry.

- Mix dill, lemon zest, lemon juice, sea salt, black pepper, and cayenne.

- Rub the salmon all over with the mixture and wrap tightly.

- Let it rest in the fridge for 8–12 hours.

- Prepare a light mustard-dill sauce using mustard, yogurt, lemon juice, dill, honey, apple cider vinegar, salt, and pepper.

- Slice the salmon thinly and serve with the sauce.

Serving Tip

Serve the gravad lax in thin slices with a spoonful of creamy mustard-dill sauce. Fresh, delicate, and aromatic — an elegant Scandinavian classic in a light PB version.

Storage Tip

Salmon can be stored for up to 2 days; sauce for up to 3 days.
