Goat Cheese with Green Beans and Tomato in Mustard Dressing

Ingredients

  • 60 g soft goat cheese
  • 120 g green beans (cooked until tender and cooled)
  • 1 ripe tomato (sliced or chopped)
  • 1 tbsp olive oil
  • 1 tsp coarse mustard (sugar-free)
  • 1 tsp lemon juice
  • Pepper, sea salt
  • Fresh parsley

Instructions

Mix olive oil, mustard, lemon juice, pepper, and salt into a dressing. Arrange the green beans and tomato on a plate. Crumble the goat cheese over the top. Drizzle the dressing over and garnish with fresh parsley.

Serving Tip

Delicious with some fresh basil or a few olives for extra depth.

Storage Tip

Store for up to 1 day in the refrigerator. Add the dressing just before serving for the best flavor and texture.
