- —150–200 g soft goat cheese
- —80 ml extra virgin olive oil
- —2–3 tsp balsamic vinegar
- —1 tsp fresh thyme (or dried)
- —10 green or black olives, finely chopped
- —2 cloves garlic, finely sliced
- —1 tsp lemon zest
- —Black pepper
- —1 tsp chili flakes (or more to taste)
Instructions
Place the goat cheese in a bowl or blender.
Add olive oil, balsamic vinegar, thyme, olives, garlic, lemon zest, pepper, and chili flakes.
Mix or blend into a creamy spread — smooth or chunky, as preferred.
Taste and adjust seasoning if needed, or add a splash of lemon juice.
Serving Tip
Perfect on rye crispbread, with grilled vegetables, or as a dip for raw veggies. Serve the spread in a small dish with a spoon. Garnish with a drizzle of olive oil, a pinch of chili flakes, and a sprig of fresh thyme or an olive on top.
Storage Tip
Store in an airtight jar in the refrigerator for up to 3 days. Let it sit at room temperature for 10 minutes before serving to soften the spread.
