
Ingredients
- —2 ripe tomatoes
- —½ red bell pepper (or a piece of leek as an alternative to cucumber)
- —½ clove of garlic
- —1 tbsp olive oil
- —1 tbsp balsamic vinegar or lemon juice
- —Salt, pepper
- —A few fresh basil leaves
Instructions
Roughly chop all the vegetables and blend them in a blender or with an immersion blender.
Add olive oil, vinegar, and seasonings, then mix until smooth.
Refrigerate for at least 1 hour to chill thoroughly.
Serving Tip
Delicious as a light lunch or summer starter, served with fresh basil or a drizzle of olive oil on top.
Storage Tip
Store for up to 2 days in the refrigerator in a sealed bottle or jar; stir before serving.
