Gado Gado with Legumes

Ingredients
- —130 g lentils/chickpeas
- —100 g green beans
- —100 g cauliflower florets
- —100 g carrots, julienned
- —50 g bean sprouts
- —1 tbsp 100% peanut butter
- —2–3 tbsp warm water
- —1 tsp lemon juice
- —½ tsp sambal (sugar-free)
- —1 tsp tamari or soy sauce (if allowed)
Instructions
Legumes: briefly heat them in a pan or steamer (2 minutes) until lukewarm.
Steam the vegetables until tender-crisp (about 8 minutes).
Mix the dressing using peanut butter, warm water, lemon juice, sambal, and tamari.
Arrange the vegetables and legumes on a platter and pour the sauce over them.
Serving Tip
Completely plant-based, protein-rich, and deliciously creamy thanks to the light peanut sauce.
