
Ingredients
- —– 2 eggs
- —– 100 g green beans
- —– 100 g cauliflower florets
- —– 100 g carrots, julienned
- —– 50 g bean sprouts
- —– 1 tbsp 100% peanut butter
- —– 2–3 tbsp warm water
- —– 1 tsp lemon juice
- —– ½ tsp sambal (sugar-free)
- —– 1 tsp soy sauce or tamari (if allowed)
Instructions
Boil the eggs for 8–9 minutes until hard, peel and halve them.
Steam the vegetables until tender-crisp (about 8 minutes) and let them cool slightly.
Mix a dressing from the peanut butter, warm water, lemon juice, sambal, and soy sauce into a smooth sauce.
Arrange the vegetables and eggs on a platter and drizzle the sauce over them.
Serving Tip
Serve warm, optionally garnished with a few sprigs of cilantro or parsley.
