Ingredients

  • 3 eggs
  • 80 g ricotta
  • 8 cherry tomatoes, halved
  • Handful of fresh basil, roughly torn
  • 1 small shallot, finely chopped
  • Pepper and sea salt to taste
  • 1 teaspoon olive oil (for greasing the pan)

Instructions

- Preheat the oven to 180°C (350°F).

- Whisk the eggs with the ricotta, pepper, and sea salt until light and airy.

- Gently fold in the shallot and basil.

- Lightly grease a muffin tin with olive oil.

- Divide the egg mixture evenly among 4 muffin cups.

- Place two cherry tomato halves, cut side up, into each muffin.

- Bake for 18–20 minutes until the muffins are set and lightly golden.

- Let cool briefly and serve warm or at room temperature.

Serving Tip

Serve the muffins with extra basil leaves and a drizzle of olive oil for a fresh, Mediterranean touch.
