Instructions
Thoroughly clean and dry a glass (mason) jar.
Peel the garlic and halve the larger cloves.
Fill the jar two-thirds full with garlic and pour in enough honey to completely cover the cloves.
Gently press the cloves down to remove any air pockets.
Seal the jar and store it in a dark place at room temperature.
During the first week, open the jar daily to release any built-up gases.
Carefully tilt or rotate the jar to ensure all garlic stays submerged in the honey.
After a few days, small bubbles will appear — this means fermentation has begun.
Allow the mixture to mature for at least 4 weeks, though a longer fermentation will deepen and mellow the flavor.
Store at room temperature and use as needed.
