Fermented Blood Orange with Ricotta and Radicchio

Ingredients
- —2 blood oranges
- —1 g fine sea salt
- —0.5 tsp finely grated orange zest
- —150 g full-fat ricotta
- —2 tbsp warm water
- —30 g unsalted butter
- —20 g walnuts, finely ground
- —60 g radicchio
- —1 tsp lemon juice
Instructions
Mix the blood orange segments with salt and orange zest, then cover and let them lightly ferment in the fridge for two days.
Whip the ricotta until smooth and airy with warm water and a pinch of salt.
Gently melt the butter and let it lightly brown with the ground walnuts.
Toss the radicchio with lemon juice. Spread the ricotta on a plate, arrange the blood orange and radicchio on top, and finish with the warm walnut butter.
Serving Tip
This dish looks best when served on a large, white plate to let the colors shine.

Store the fermented blood orange in an airtight container in the fridge for up to three days.
