Endive Salad with Chicken and Mustard Dressing

Ingredients

  • 120 g cooked or grilled chicken breast, sliced into strips
  • 2 heads of endive, finely chopped
  • ½ carrot, grated
  • 1 tbsp olive oil
  • 1 tsp coarse mustard
  • 1 tsp lemon juice
  • Pepper, sea salt

Instructions

  • Whisk together the dressing using olive oil, mustard, and lemon juice.

  • Combine the endive, carrot, and chicken strips in a bowl.

  • Pour the dressing over the salad and gently toss to coat.

Serving Tip

Deliciously fresh with some chopped chives or a pinch of turmeric.

Storage Tip

Store the salad for up to 1 day in the refrigerator in a well-sealed container. Add the dressing just before serving to keep the endive crisp and the chicken tender.
