Endive Salad with Apple and Goat Cheese

Ingredients

  • – 2 heads of endive (finely chopped)
  • – ½ apple (diced)
  • – 60 g soft goat cheese
  • – 1 tbsp olive oil
  • – 1 tsp lemon juice
  • – Pepper, sea salt
  • – (optional) some walnut or parsley

Instructions

Trim the base of the endive, remove the hard core if necessary, and slice the leaves into thin strips. Combine the endive with apple and goat cheese in a bowl. Whisk together a dressing of olive oil, lemon juice, pepper, and salt. Gently mix everything together and serve chilled.

Serving Tip

Delicious with rye crispbread or a handful of lamb's lettuce on the side.

Storage Tip

Store for up to 1 day in the refrigerator; add the dressing only right before serving to keep the endive crisp.
