Endive Mash

Ingredients

  • 100 g potato (cooked)
  • 120 g endive, finely chopped
  • 1 tsp olive oil or ghee
  • Pepper, sea salt, nutmeg
  • Optional: 1 boiled egg or a few spoonfuls of sautéed veal mince

Instructions

  • Mash the warm potatoes with olive oil and spices.

  • Stir in the raw endive until it softens slightly.

  • Serve immediately with the egg or mince on the side.

Air fryer: 180°C – 10 minutes (as a casserole)

Serving Tip

Delicious with a spoonful of mustard cream sauce or warm tomato sauce. Mash the potatoes, mix in the endive, and season with spices. Scoop the mash into a shallow bowl, nestle the boiled egg or mince halfway in for a rustic look. Sprinkle with a pinch of nutmeg or a sprig of fresh parsley.

Storage Tip

Cool leftover mash quickly and store in the fridge for up to 1 day. Reheat in a pan with a splash of water or in the oven at 160°C.
