
Ingredients
- —100 g potato (cooked)
- —120 g endive, finely chopped
- —1 tsp olive oil or ghee
- —Pepper, sea salt, nutmeg
- —Optional: 1 boiled egg or a few spoonfuls of sautéed veal mince
Instructions
Mash the warm potatoes with olive oil and spices.
Stir in the raw endive until it softens slightly.
Serve immediately with the egg or mince on the side.
Air fryer: 180°C – 10 minutes (as a casserole)
Serving Tip
Delicious with a spoonful of mustard cream sauce or warm tomato sauce. Mash the potatoes, mix in the endive, and season with spices. Scoop the mash into a shallow bowl, nestle the boiled egg or mince halfway in for a rustic look. Sprinkle with a pinch of nutmeg or a sprig of fresh parsley.
Storage Tip
Cool leftover mash quickly and store in the fridge for up to 1 day. Reheat in a pan with a splash of water or in the oven at 160°C.
