Egg Cream with Spinach and Goat Cheese

Ingredients

  • —2 eggs
  • —1 handful of fresh spinach, finely chopped
  • —30 g soft goat cheese
  • —Salt and pepper
  • —Pinch of nutmeg (optional)

Instructions

  • Boil the eggs until hard and rinse them under cold water.

  • Peel the eggs and mash them into a smooth base.

  • Add the goat cheese and mix until creamy.

  • Stir in the finely chopped spinach.

  • Season with salt, pepper, and optionally a pinch of nutmeg.

  • Shape small quenelles or balls using two spoons and serve.
