Egg Cream with Spinach and Goat Cheese

Ingredients
- —2 eggs
- —1 handful of fresh spinach, finely chopped
- —30 g soft goat cheese
- —Salt and pepper
- —Pinch of nutmeg (optional)
Instructions
Boil the eggs until hard and rinse them under cold water.
Peel the eggs and mash them into a smooth base.
Add the goat cheese and mix until creamy.
Stir in the finely chopped spinach.
Season with salt, pepper, and optionally a pinch of nutmeg.
Shape small quenelles or balls using two spoons and serve.
