🥦 Edamame Burger

Ingredients

  • 120 g cooked soybeans (edamame, unsalted)
  • 1 small carrot, finely grated
  • 2 tbsp finely chopped leek
  • 1 egg
  • 1 tsp olive oil
  • Pepper, sea salt, nutmeg or garlic powder

Instructions

  • Coarsely mash the soybeans with carrot, leek, egg, and spices into a cohesive mixture.

  • Shape into two small burgers.

  • Cook in a pan with a little olive oil over medium heat, or in the air fryer at 180 °C – 12 minutes until golden brown.

Serving Tip

Serve the burgers on a small plate with a dollop of yogurt dressing on the side and a few sprigs of chives or lamb's lettuce on top. Delicious with a spoonful of yogurt dressing and a fresh salad of tomato and lamb's lettuce.

Storage Tip

Store for up to 1 day in the refrigerator. Reheat briefly in the pan or air fryer; let them come to room temperature first.
