- —150g leek, sliced
- —150g firm potatoes, diced
- —1 clove of garlic, finely chopped
- —70g yogurt (full-fat, goat, or sheep yogurt)
- —1 teaspoon mustard
- —1 teaspoon lemon zest
- —Salt and pepper to taste
- —2–3 tablespoons water for cooking
Instructions
Heat a pan with a small splash of water.
Add the diced potatoes and let them soften over medium heat.
Mix in the leek and garlic once the potatoes start to warm through.
Cook everything together until tender and fragrant.
Remove the pan from the heat and gently stir in the yogurt, mustard, and lemon zest.
Season with pepper and a pinch of salt.
Serve warm as a light and refreshing Dutch-style dish.
