Dutch Leek and Potato Light Pan

Ingredients

  • 150g leek, sliced
  • 150g firm potatoes, diced
  • 1 clove of garlic, finely chopped
  • 70g yogurt (full-fat, goat, or sheep yogurt)
  • 1 teaspoon mustard
  • 1 teaspoon lemon zest
  • Salt and pepper to taste
  • 2–3 tablespoons water for cooking

Instructions

  • Heat a pan with a small splash of water.

  • Add the diced potatoes and let them soften over medium heat.

  • Mix in the leek and garlic once the potatoes start to warm through.

  • Cook everything together until tender and fragrant.

  • Remove the pan from the heat and gently stir in the yogurt, mustard, and lemon zest.

  • Season with pepper and a pinch of salt.

  • Serve warm as a light and refreshing Dutch-style dish.
