Cucumber Radish Salad with Goat Cheese and Herbs

Ingredients

  • 150 g cucumber
  • 100 g radish
  • 50 g celery
  • 50 g soft goat cheese
  • 5 g fresh dill
  • 5 g fresh chives
  • 5 g fresh mint
  • 1 tbsp lemon juice
  • pinch of salt
  • pinch of black pepper

Instructions

  • Wash the cucumber and slice it thinly. Wash the radishes and slice them into thin rounds, and cut the celery into fine arcs.

  • Finely chop the dill, chives, and mint, and mix them with the cucumber, radish, and celery in a bowl.

  • Crumble the goat cheese over the top.

  • Mix the lemon juice with salt and pepper and drizzle over the salad, gently tossing until everything is lightly coated.
