
Crunchy & Green – Reinventing Your Fry Moment
Ingredients
- —150 g celeriac or parsnip (cut into fries)
- —1 tsp olive oil
- —½ tsp paprika powder
- —120 g green vegetables (e.g. green beans, broccoli, or zucchini)
- —Pepper, salt
- —(Optional) 1 boiled egg or 100 g chicken breast for extra protein

Sometimes you just crave fries. And that’s okay. This green version gives you that same feeling, just without the guilt — crispy on the outside, soft on the inside, with a touch of fresh greens to make you feel perfectly “balanced” again.
Preheat the oven to 200 °C or the air fryer to 180 °C.
Toss the celeriac fries with oil, paprika powder, pepper, and salt.
Bake for 20–25 minutes in the oven (or 12–14 minutes in the air fryer) until golden brown.
Meanwhile, cook or steam the green vegetables until tender-crisp.
Serve everything together in a bowl, with the egg or chicken on the side.
đź’ˇ Delicious with a spoonful of yogurt dressing (with garlic powder) or mustard dip.
Serving Tip
Serve the “fake fries” in a small bowl or on a platter, with the green vegetables alongside as if it were a fresh salad. Place the yogurt dressing in a separate dish or drizzle a few playful streaks over the top. Finish with some fresh herbs (parsley or chives) and a pinch of coarse sea salt — so it looks just as tempting as real fries.
