
Cottage Cheese with Roasted Grapes, Walnuts & Rosemary

- —150 g blue grapes
- —20 g walnuts
- —1 tsp fresh rosemary, finely chopped
- —1 tsp lemon zest
- —1 tsp honey (optional)
- —Freshly ground black pepper
Instructions
Sweet, warm grapes and creamy cottage cheese make for a surprisingly delicious combination. Roasting the grapes briefly intensifies their flavor and makes them wonderfully juicy. Combined with crunchy walnuts, fresh rosemary, and a hint of lemon, this creates a nutritious snack that's a little different.
Perfect as a high-protein snack or light afternoon bite.
Preheat the oven to 200°C (392°F).
Place the grapes on a baking sheet and roast for 10 minutes until they slightly burst open.
Divide the cottage cheese between two bowls.
Spoon the warm grapes on top and garnish with coarsely chopped walnuts, rosemary, lemon zest, and optionally a small drizzle of honey.
Finish with a twist of black pepper.
Serving Tip
Also delicious with roasted pecans or fresh thyme.

Roast the grapes just before serving. The cottage cheese will keep for up to 2 days in the refrigerator.
