
Ingredients
- —½ ripe avocado
- —80 g fresh spinach
- —100 ml water or unsweetened almond milk
- —1 tbsp olive oil
- —1 tsp lemon juice
- —Pinch of pepper
- —(optional) a few fresh mint leaves
Instructions
Place all ingredients in a blender and blend until smooth and creamy.
Taste and adjust with extra lemon juice or mint if desired.
Serve well chilled with a few drops of olive oil on top.
