Cold Avocado Spinach Soup

Ingredients

  • ½ ripe avocado
  • 80 g fresh spinach
  • 100 ml water or unsweetened almond milk
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • Pinch of pepper
  • (optional) a few fresh mint leaves

Instructions

Place all ingredients in a blender and blend until smooth and creamy. Taste and adjust with extra lemon juice or mint if desired. Serve well chilled with a few drops of olive oil on top.

Soft, creamy, and refreshing — perfect as a light lunch or summer appetizer.

Storage Tip

Store for up to 1 day in the refrigerator, well covered. Stir or blend briefly before serving.
