Ingredients
- —160 g cod fillet
- —150 g runner beans, sliced diagonally
- —1 teaspoon olive oil
- —1 teaspoon lemon zest
- —1 tablespoon lemon juice
- —70 g yogurt (full-fat, goat, or sheep yogurt)
- —1 tablespoon fresh dill, finely chopped
- —Pepper and sea salt to taste
- —Optional: thin slices of baby cucumber for freshness
Instructions
- Bring a pot of water to a boil and steam or boil the runner beans for 3–4 minutes until tender-crisp.
- Pat the cod dry and season with pepper, salt, and a little lemon zest.
- Heat olive oil in a frying pan and cook the cod for 2–3 minutes on each side until soft and translucent.
- Mix yogurt, lemon juice, dill, pepper, and salt into a refreshing sauce.
- Serve the cod with the runner beans and the lemon-dill sauce either alongside or drizzled over.
- Optionally, add cucumber slices for extra freshness.
