Ingredients
- —150–200 g cod fillet
- —1 small lemon (sliced)
- —1 clove garlic, finely chopped
- —1 handful of leek or spring onion, sliced
- —Salt and pepper
- —A small splash of water or lemon juice
Instructions
Preheat the oven to 180°C (356°F).
Cut a large piece of aluminum foil and place the cod in the center.
Season the fish with salt and pepper.
Add garlic, leek or spring onion, and place 2–3 lemon slices on top.
Drizzle a small splash of water or lemon juice over the fish to help it steam beautifully.
Fold the foil tightly into a sealed packet.
Bake for 15–18 minutes in the oven, depending on the thickness of the fish.
Serve directly from the foil packet.
Serving Tip
Serve directly from the packet for extra aroma. A deliciously tender cod parcel from the oven — steamed in its own juices with herbs and vegetables, pure and light.
Storage Tip
The packet is best enjoyed fresh from the oven. Leftovers can be stored for 1 day and gently reheated in the oven.
