Ingredients
- —3 heads of chicory, sliced into strips
- —100 g cherry tomatoes, halved
- —100 g mozzarella
- —1 tsp olive oil
- —Pepper, salt
- —Thyme or basil
Instructions
Preheat the oven to 180 °C (356 °F).
Slice the chicory into strips and cook or steam for 3–4 minutes until slightly softened.
Drain and let it sit briefly to remove excess moisture.
Mix the chicory with the tomatoes, drizzle with olive oil, and season with herbs.
Top with mozzarella and bake for 20 minutes until the cheese turns golden brown.
Air fryer option: 170 °C (338 °F) – 12–14 minutes
Serving Tip
Serve directly from the baking dish or on a white plate to highlight the colors of the chicory, tomato, and mozzarella. Garnish with a few fresh basil leaves or a pinch of black pepper.
Storage Tip
Store for up to 1 day in the refrigerator. Reheat in the oven at 160 °C (320 °F) for 10 minutes.
