Chicken Skewers with Blueberry Sauce

Ingredients

  • 1 chicken breast
  • 0.5 handful fresh cilantro
  • 0.5 handful fresh basil
  • 0.5 orange, juice and zest
  • 1 clove garlic
  • 1 tbsp olive oil
  • pepper
  • salt
  • 60 g blueberries
  • 0.5 spring onion
  • 1 tbsp balsamic vinegar
  • 0.5 tbsp agave syrup

Instructions

  • Blend the cilantro, basil, orange juice and zest, garlic, and olive oil into a smooth marinade.

  • Season with pepper and salt.

  • Cut the chicken breast into strips and mix with the marinade.

  • Cover and let marinate in the fridge for at least 1 hour.

  • For the sauce, blend half of the blueberries with the spring onion and a splash of water until smooth.

  • Heat the remaining blueberries with balsamic vinegar and agave syrup.

  • Let simmer gently for 10 minutes.

  • Stir in the blended blueberries and let the sauce reduce for another 10 minutes.

  • Thread the chicken onto skewers.

  • Grill the skewers in a hot grill pan until golden brown and cooked through.

  • Serve immediately with the warm blueberry sauce.
