
Ingredients
- —120 g chicken breast (cubed)
- —½ tsp olive oil or ghee
- —¼ tsp ground cumin
- —¼ tsp ground coriander
- —¼ tsp paprika powder
- —Pinch of pepper and salt
- —Splash of lemon juice
Instructions
Mix the chicken with the spices, oil, and lemon juice. Let it marinate for 10 minutes.
Thread the cubes onto skewers or cook them directly in a frying pan or grill. Cook for 4–5 minutes per side until golden brown and cooked through.
Prepare the sauce: heat the peanut butter with water in a small pan or bowl. Stir until smooth. Add lemon juice, soy sauce, and ginger.
Serve the chicken with the warm sauce poured over or on the side.

A soft, creamy sauce with a mild kick – comfort food in clean Metabolic style. Serve on a plate with the sauce in a small dish on the side and some fresh coriander on top. Delicious with steamed vegetables like green beans or cauliflower rice.
Storage Tip
You can store the chicken and sauce covered in the fridge for up to 2 days. The sauce thickens after cooling – stir in a splash of warm water when reheating.
