Chicken Curry Salad

Ingredients

  • 100 g chicken breast (cooked or grilled, finely chopped)
  • 2 tbsp full-fat yogurt (3.5% or goat yogurt)
  • ½ tsp curry powder
  • ½ tsp turmeric
  • ½ tsp lemon juice
  • Pepper, salt
  • (Optional) finely chopped parsley or apple cubes (for freshness)

Instructions

  • Mix the yogurt with curry powder, turmeric, lemon juice, pepper, and salt to create a smooth sauce.

  • Add the chicken and stir well to coat everything with the dressing.

  • Let it rest in the fridge for at least 15 minutes.

  • Serve chilled — as a salad, or on rye crispbread topped with some cress.

Serving Tip

Fresh, flavorful, and protein-rich — perfect for lunch or a light meal. Serve with a scoop of chicken curry salad in the center, topped with cress or parsley, and a half lemon on the side. Also delicious on a cracker with some lamb's lettuce or cucumber ribbons.

Storage Tip

Store covered in the fridge for up to 2 days. Stir before serving and add a drop of yogurt if it has thickened slightly.
