Chicken Breast Stuffed with Spinach, Herbs, and Tomato

Ingredients
- —– 120 g chicken breast (one piece, butterflied)
- —– 80 g fresh spinach
- —– 1 small tomato (diced)
- —– 1 tsp olive oil or ghee
- —– Fresh herbs (basil, thyme, oregano)
- —– Pepper, sea salt
Instructions
Briefly sauté the spinach in a pan until wilted.
Mix with the diced tomato, herbs, pepper, and sea salt.
Stuff the chicken breast with this mixture and fold it closed (secure with a toothpick if needed).
Place in a baking dish, brush with olive oil or ghee, and bake for 20 minutes at 180 °C.
Air fryer: 180 °C – 15 minutes, turning halfway through.
Serving Tip
Delicious served with some grilled leek or carrot as a side dish.
Storage Tip
Store for up to 1 day in the refrigerator and reheat briefly in the oven (not the microwave, to keep the chicken juicier).
