Cauliflower Soup

Ingredients

  • —1 small cauliflower, cut into florets
  • —1 small onion, finely chopped
  • —1 clove garlic, finely chopped
  • —500–600 ml water or low-sodium broth
  • —Salt and pepper
  • —Pinch of nutmeg or cumin (optional)

Instructions

  • Bring the water or broth to a boil.

  • Add the onion, garlic, and cauliflower florets.

  • Cook for 12–15 minutes until the cauliflower is tender.

  • Blend the soup with an immersion blender until smooth.

  • Season with salt, pepper, and optionally nutmeg or cumin.

  • Serve immediately.

Serving Tip

Serve immediately, optionally with extra cauliflower florets or a sprinkle of spices. A soft, creamy cauliflower soup without cream — light, pure, and perfect for a quick warm meal.

Storage Tip

Keeps well in the fridge for 2 days. Can also be frozen.
