Ingredients

  • 200 g cauliflower rice (fresh or frozen, thawed)
  • 1 egg
  • 1 tablespoon ricotta or yogurt (full-fat, goat, or sheep yogurt)
  • 1 teaspoon oregano
  • Pepper and sea salt to taste
  • 1 tomato, thinly sliced
  • 60 g smoked chicken breast strips (Metabolic Balance-friendly alternative to prosciutto)
  • Handful of arugula
  • 1 teaspoon lemon zest
  • 1 teaspoon olive oil

Instructions

- Preheat the oven to 200°C (390°F).

- Mix the cauliflower rice with the egg, ricotta or yogurt, oregano, pepper, and salt.

- Shape a thin, round pizza crust on a baking sheet lined with parchment paper.

- Bake the crust for 15 minutes until firm and lightly golden.

- Top the crust with tomato slices and smoked chicken.

- Bake for another 8–10 minutes until warm and slightly crisp.

- Toss the arugula with lemon zest and a drizzle of olive oil.

- Serve the pizza with the fresh arugula on top.

Serving Tip

Add the arugula right before serving to keep it fresh and crunchy.

Storage Tip

The cauliflower crust can be baked ahead of time and stored in the refrigerator for up to one day.
