Café de Paris Butter

Ingredients

  • 350 g unsalted butter, at room temperature
  • 1 shallot, finely chopped
  • 1 teaspoon Dijon mustard
  • 4 teaspoons capers
  • 3 anchovy fillets
  • 2 teaspoons Worcestershire sauce
  • 10 g parsley
  • 10 g chives
  • 10 g tarragon
  • 1 teaspoon garlic powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon curry powder
  • Juice of half a lemon

Instructions

  • Gently heat the shallot, mustard, capers, anchovies, Worcestershire sauce, garlic powder, cayenne, curry powder, and lemon juice for 5 minutes over low heat.

  • Add the parsley, chives, and tarragon.

  • Blend into a green, pesto-like paste.

  • Whip the butter for 10 minutes until light and fluffy using a mixer.

  • Fold 3 generous tablespoons of the herb mixture into the butter.

  • Serve on a platter with baguette or use warm over meat or vegetables.
