Broccoli Bowl with Warm Tomatoes and Mint-Parsley Sauce

Ingredients

  • —250 g broccoli, cut into small florets
  • —8 cherry tomatoes, halved

  • —Pepper and sea salt to taste

Instructions

- Cook or steam the broccoli for 3–4 minutes until tender-crisp.

- Heat the olive oil in a pan and sear the tomatoes cut-side down until blistered.

- Blend the mint, parsley, lemon zest, yogurt, pepper, and salt into a smooth green sauce.

- Place the broccoli in a bowl and arrange the warm tomatoes on top.

- Drizzle the mint-parsley sauce over the dish and serve immediately.
