Black Bean Bolognese

Ingredients

  • 1 small onion, finely chopped
  • 1 clove of garlic, minced
  • 150 g black beans (drained and rinsed)
  • 150 g diced tomatoes (unsweetened)
  • 1 teaspoon tomato paste
  • 1 stalk of celery, finely chopped
  • 1 small carrot, diced
  • 1 teaspoon Italian herbs
  • A pinch of chili flakes
  • 1 teaspoon olive oil
  • Pepper and sea salt to taste
  • Optional: ribbons of zucchini or runner beans as 'pasta'

Instructions

- Heat the olive oil in a pan and gently sauté the onion, garlic, carrot, and celery for 3 minutes.

- Add the tomato paste and cook briefly to enhance the flavor.

- Stir in the diced tomatoes, black beans, Italian herbs, and chili flakes.

- Let the sauce simmer gently for 10–12 minutes until it thickens.

- Season with pepper and sea salt to taste.

- Serve warm, optionally over zucchini or runner bean ribbons.

Serving Tip

A deep, rich, tomato-based sauce — entirely made with black beans. Serve the bolognese in a deep bowl with ribbons of runner beans or zucchini for an elegant, light 'pasta' presentation.

Storage Tip
