- —1 teaspoon olive oil
- —Pepper and sea salt to taste
- —Optional: ribbons of zucchini or runner beans as 'pasta'
Instructions
- Heat the olive oil in a pan and gently sauté the onion, garlic, carrot, and celery for 3 minutes.
- Add the tomato paste and cook briefly to enhance the flavor.
- Stir in the diced tomatoes, black beans, Italian herbs, and chili flakes.
- Let the sauce simmer gently for 10–12 minutes until it thickens.
- Season with pepper and sea salt to taste.
- Serve warm, optionally over zucchini or runner bean ribbons.
