Atlantic Wolffish with Cauliflower Rice and Green Beans

Ingredients

  • 120 g Atlantic wolffish fillet (or haddock)
  • 150 g cauliflower rice
  • 130 g green beans
  • 1 tsp olive oil or ghee
  • 1 tsp lemon juice
  • Pepper, salt
  • Fresh dill or parsley

Instructions

  • Cook or steam the green beans until tender-crisp (6–8 minutes).

  • Heat ½ tsp olive oil in a pan and pan-fry the wolffish for 3–4 minutes on each side until golden brown.

  • In a second pan: sauté the cauliflower rice in ½ tsp olive oil for 4–5 minutes and add the green beans.

  • Season everything with pepper, salt, and dill.

  • Serve the fish on top of the vegetable mix and drizzle with lemon juice.

Air fryer option:

  • Green beans: 160 °C – 8 minutes

  • Wolffish: 170 °C – 8 minutes. Combine afterward with cauliflower rice from the pan.

Serving Tip

Serve on a light plate with the fish placed on top of the vegetable mix. Garnish with some fresh dill and a thin slice of lemon.

Storage Tip

Store for up to 1 day in the refrigerator. Reheat briefly in a pan or in the oven at a low temperature (160 °C).
