
Atlantic Wolffish with Cauliflower Rice and Green Beans
Ingredients
- —120 g Atlantic wolffish fillet (or haddock)
- —150 g cauliflower rice
- —130 g green beans
- —1 tsp olive oil or ghee
- —1 tsp lemon juice
- —Pepper, salt
- —Fresh dill or parsley
Instructions
Cook or steam the green beans until tender-crisp (6–8 minutes).
Heat ½ tsp olive oil in a pan and pan-fry the wolffish for 3–4 minutes on each side until golden brown.
In a second pan: sauté the cauliflower rice in ½ tsp olive oil for 4–5 minutes and add the green beans.
Season everything with pepper, salt, and dill.
Serve the fish on top of the vegetable mix and drizzle with lemon juice.
Air fryer option:
Green beans: 160 °C – 8 minutes
Wolffish: 170 °C – 8 minutes. Combine afterward with cauliflower rice from the pan.
Serving Tip
Serve on a light plate with the fish placed on top of the vegetable mix. Garnish with some fresh dill and a thin slice of lemon.
Storage Tip
Store for up to 1 day in the refrigerator. Reheat briefly in a pan or in the oven at a low temperature (160 °C).
