Asparagus Salad with Feta and Fresh Herbs

Ingredients
- —200 g green asparagus
- —100 g cherry tomatoes
- —75 g radishes
- —50 g feta
- —10 g fresh parsley
- —10 g fresh mint
- —1 tbsp lemon juice
- —1 tsp mustard
- —pinch of salt
- —pinch of black pepper
Instructions
Bring water to a boil and cook the halved asparagus for 3 to 4 minutes until tender-crisp, rinse with cold water and drain.
Halve the cherry tomatoes and slice the radishes thinly.
Roughly chop the parsley and mint and mix them with the asparagus, tomatoes, and radishes in a bowl.
Crumble the feta over the top. Mix lemon juice with mustard, salt, and pepper to create a fresh dressing and gently toss it through the salad.
