Asparagus Salad with Feta and Fresh Herbs

Ingredients

  • 200 g green asparagus
  • 100 g cherry tomatoes
  • 75 g radishes
  • 50 g feta
  • 10 g fresh parsley
  • 10 g fresh mint
  • 1 tbsp lemon juice
  • 1 tsp mustard
  • pinch of salt
  • pinch of black pepper

Instructions

  • Bring water to a boil and cook the halved asparagus for 3 to 4 minutes until tender-crisp, rinse with cold water and drain.

  • Halve the cherry tomatoes and slice the radishes thinly.

  • Roughly chop the parsley and mint and mix them with the asparagus, tomatoes, and radishes in a bowl.

  • Crumble the feta over the top. Mix lemon juice with mustard, salt, and pepper to create a fresh dressing and gently toss it through the salad.

A light, crunchy salad where green asparagus, fresh herbs, and creamy feta come together for a bright and summery dish.
