Asian Noodle Salad with Beef Tips

  • 100 g noodles
  • 300 g beef tips
  • 1 cucumber
  • 100 g mango
  • 1 red bell pepper
  • 250 g green beans
  • 1 handful cashew nuts
  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon white wine vinegar
  • 1 clove garlic
  • 1 tablespoon olive oil or butter

Instructions

  • Cook the noodles according to the package instructions

  • Rinse with cold water and drain well

  • Cook the green beans until tender-crisp and let them cool

  • Dice the mango and bell pepper into small cubes

  • Shave or slice the cucumber into thin ribbons

  • Mix soy sauce, honey, vinegar, and garlic into a dressing

  • Heat oil or butter in a pan

  • Quickly sear the beef tips until medium

  • Toss the noodles, vegetables, and mango with the dressing

  • Add the beef tips and mix gently

  • Top with cashew nuts
