Arugula Salad with Melon, Ham, and Mozzarella

Ingredients

  • 75 g arugula
  • 150 g melon
  • 60 g prosciutto
  • 100 g mozzarella
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon balsamic vinegar
  • 15 g pine nuts
  • sea salt to taste
  • black pepper to taste

Instructions

  • Wash the arugula and let it drain well.

  • Cut the melon into evenly sized cubes.

  • Spread the arugula over a large serving dish.

  • Add the melon and mozzarella.

  • Loosely drape the prosciutto over the salad.

  • Mix the olive oil with balsamic vinegar, salt, and pepper.

  • Drizzle the dressing over the salad.

  • Sprinkle with lightly toasted pine nuts.
