Artichoke with Dipping Sauce

Ingredients

  • 1 large artichoke
  • 200 ml yogurt
  • 1 tablespoon lemon juice
  • Fresh herbs like dill or parsley
  • Salt and pepper

Instructions

  • Cut off the top of the artichoke straight and remove any sharp tips.

  • Rinse the artichoke under cold water.

  • Boil the artichoke for 25–35 minutes until the leaves come off easily.

  • Mix yogurt, lemon juice, and herbs into a light dipping sauce.

  • Drain the artichoke well.

  • Serve the artichoke warm with the dipping sauce on the side.

  • Pull off a leaf, dip it in the sauce, and scrape off the soft part with your teeth.
